Crunchy raisin and rice salad















What's in it?

Brown shortgrain rice
Spring onions
Red pepper
Cucumber
Celery
A grated carrot
Currants
Raisins, cranberries etc.
Sunflower seeds
Pumpkin seeds
Pine nuts
Plenty of parsley
Chives
Mint if you like


What do I do?
Chop up the the crunchy veg and grate the carrot. Add the spring onions, seeds, dried fruit and herbs. Season with salt and pepper, lemon juice and olive oil...This is a great lunchtime salad. Very filling and nutritious. Follow it up with a banana and you've had a fully balanced meal. Enjoy!

Rocket, avocado, peas & pine nut salad














What's in it?

rocket
peas (cooked or raw)
lettuce
1 avocado
handful of pine nuts (roasted)
fennel
a shallot
lemon juice
olive oil
parsley & mint
salt & pepper
a drop of mustard


What do I do?
Fry the pine nuts in a pan for a few minutes until they're brown. Boil the peas if you want. Chop the fennel into thin slices and chop the shallot finely. Throw it all in your bowl & add lemon juice, olive oil, parsley, mint & salt and pepper. Mix & eat with a chunky slice of bread...

Carrot and mung bean salad














What's in it?

1 carrot
some sprouted mung beans
black mustard seeds
fresh coriander/parsley
1/2 a lemon juice
olive oil
salt & pepper

What do I do?
Grate a carrot in a bowl and mix with the sprouted mung beans, a sprinkle of mustard seeds. Chop some fresh coriander or parsely...chuck it in. Pour the lemon juice & olive oil on & season it and it's done. This was inspired by salads I had in India. You could also grate some beetroot in it...
